Top it off with warm apple cinnamon compote and fresh blueberries for a naturally sweet, antioxidant packed twist.

Ingredients
INGREDIENTS - COMPOTE
1 apple, peeled, cubbed
1/2 tsp ground cinnamon
3 tbsp water
1/2 tbsp maple syrup
1/8 tsp vanilla essence
INGREDIENTS - PUDDING
1/2 cup wheat free oats
1 1/2 tbsp chia seeds
1 cup almond milk
2 fresh dates, finely sliced
1/4 cup fresh blueberries
2 tbsp mixed seeds (almonds, pumpkin seeds, sunflower seeds, cashews)
Preparation
Step 1
Add all compote ingredients to a small sauce pan, over low heat.
Step 2
Let the ingredients simmer until all of the water has evaporated. Turn off and set aside.
Step 3
In another small sauce pan, add oats, chia seeds, milk and dates. Simmer over low heat. Once the milk has been completely absorbed, set aside. Stir occasionally to avoid burning.
Step 4
In a small bowl, add compote, pudding and top with fresh blueberries and seeds.
