Ingredients
1 egg
1 ripe banana
3 tbsp oat flour
1/2 lemon, juice
1 tbsp extra virgin olive oil, for cooking
1 tbsp coconut yoghurt, serving
Maple syrup, serving
Preparation
Step 1
In a small bowl, mash the ripe banana until smooth.
Step 2
Add the remaining ingredients and mix until well combined, creating a batter.
Step 3
Heat a small frying pan over low heat and add a little extra virgin olive oil to coat the surface.
Step 4
Spoon 1 teaspoon of pancake batter into the pan. Cook for 1–2 minutes, or until golden on one side.
Step 5
Carefully flip and cook the other side until golden and cooked through.
Step 6
Remove from the pan and repeat with the remaining batter.
Step 7
Serve warm with your favourite toppings, such as coconut yoghurt and a drizzle of maple syrup.
