Ingredients
1/3 cup almond butter
1/4 cup maple syrup
1/4 cup coconut oil
1/2 tsp vanilla extract
2 cup wheat free oats
1 tsp cinnamon
coconut yoghurt, topping
mixed berries, topping
bee pollen, topping
Preparation
Step 1
Preheat the oven to 180ºC and lightly grease a small baking tray with extra virgin olive oil spray.
Step 2
In a large bowl, combine the oats and cinnamon, stirring well. Set aside.
Step 3
In a small bowl, whisk together the almond butter, maple syrup, coconut oil, and vanilla extract until smooth.
Step 4
Pour the wet mixture into the oats and stir until fully combined.
Step 5
Transfer the mixture to the prepared baking tray, pressing it down firmly into an even layer.
Step 6
Bake for 30 minutes, or until the edges are golden and crispy.
Step 7
Let cool completely before topping with a layer of coconut yogurt, fresh berries, and a sprinkle of bee pollen.
